INGREDIENTS

  • 600g butternut squash, peeled, seeded and cut into large chunks
  • 2 fennel bulbs, trimmed and sliced
  • 2 small red onions, peeled and sliced
  • 2 cloves garlic, unpeeled
  • 1 tablespoon of olive oil
  • 1/4 teaspoon chili flakes, dried
  • 4 medium chicken breasts, skinless, raw, 4 x 165 g
  • 200 g of Ricotta cheese
  • 1 peel of 1 lemon
  • 4 sprigs of thyme, fresh, leaves picked
  • 4 sprays Cooking spray with controlled calorie content
  • 90 ml of balsamic vinegar

Instruction

Step 1

Preheat the oven to 200°C, fan to 180°C, gas setting 6. Place the squash, fennel, onion and garlic in a large baking dish. Drizzle with oil and sprinkle with chili flakes. Season well with salt and freshly ground black pepper and fry for 40 minutes until golden and soft.

Step 2

Meanwhile, place the chicken between two sheets of cling film and flatten to a thickness of 5mm with a rolling pin. Mix the ricotta with the lemon zest and thyme. Salt and rub the chicken well. Roll tightly into sausage shapes.

Step 3

Mist a large skillet with cooking spray. Cook the chicken over medium/high heat until golden. Transfer to a baking dish lined with double foil. Fold the foil to form a packet and bake for 25 minutes.

Step 4

Meanwhile, bring the balsamic vinegar to a boil in a small saucepan. Cook for 2-3 minutes until syrupy, then remove from heat.

Step 5

When the vegetables are cooked, remove them from the oven. Squeeze the roasted garlic pulp from the skins and mix the vegetables with the balsamic syrup.

Step 6

Cut the chicken into thicker slices and serve with vegetables.
